Vegan Banana Chocolate Chip Muffins

This recipe is egg free, peanut free, dairy free and tree nut free.  Over the past few years after our little one was diagnosed with an egg, peanut and tree nut allergy we have experimented with quite a few recipes!  We finally developed our favorite banana bread muffin recipe that even our biggest skeptics enjoy.  We hope you enjoy it too!  


Vegan Banana Chocolate Chip Muffins

Ingredients:
3 ripe bananas
1 cup granulated sugar
1/2 cup (1 stick/ 4 oz) vegan butter, softened
1 tsp Pure vanilla extract
2 apple/banana fruit puree pouches (this is the egg substitute)
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp sea salt
1/2 tsp cinnamin
12 oz bag chocolate chips of your choice to top

Instructions:
1. Preheat oven to 350 degrees

2. Melt butter for 1 minute

3. Combine everything in one big bowl! Voila!

4. Spoon a few scoops into each muffin liner

5. Sprinkle chocolate chips on top!

6. Bake for about 25 minutes.





Notes: You can sub for gluten free flour. Oven times and temperatures may vary. Check with qtip to verify they are done.
