Best EVER Vegan Chocolate Chip Cookies!

by - January 02, 2021

First, I just want to start by saying how excited I am that Nestle now has allergen free chocolate chips that we can eat by the handful!  If someone in your family has food allergies, you know what a relief this is!

If you are egg free like us, we often use these pouches in lieu of eggs.  We swap one pouch per egg.

So, on to the recipe we LOVE!!  This recipe is egg free, peanut free, dairy free and tree nut free.

Best EVER Vegan Chocolate Chip Cookies

Ingredients:
¾ cup packed light brown sugar
¾ cup granulated sugar
1 cup (2 sticks/ 8 oz) vegan butter, softened
1 tsp Pure vanilla extract
1 apple/banana fruit puree pouch
2 ¾ cup all-purpose flour
1 tsp baking soda
¾ tsp sea salt
12 oz bag chocolate chips of your choice

Instructions:
1. Preheat oven to 375 degrees

2. Mix sugars, butter, vanilla and pouch puree.

3. Combine flour, baking soda and salt together.  (We just throw it all together).

4. The dough may seem dry but do not fret!  Stir in chocolate chips.

5. Place rounded spoonfuls on a cookie sheet a few inches apart and bake for about 10 minutes or until the edges start to brown.

6. Must eat at least a few while warm

Notes: You can sub for gluten free flour. Cookies may still look doughy after 10 minutes but that's what makes them oh-so good! Feel free to bake longer if you prefer hard cookies.
